Hot buttered rum and vanilla winter cocktails

WINTER warmers and classic cocktails are hot news once again. Try your hand at these three, perfect for Christmas.

EGG NOG 

(Makes seven)

Ingredients

555ml milk

3 whole cloves

½ tsp vanilla extract

1g ground cinnamon

7 egg yolks

175g sugar

345ml gold rum

555ml single cream

2tsp vanilla extract

Pinch ground nutmeg.

Method

Combine the milk, cloves, ½ teaspoon vanilla extract and cinnamon in a saucepan, and heat over the lowest setting for five minutes. Slowly bring to the boil.

In a large bowl, combine the egg yolks and sugar and whisk together until fluffy. Then whisk the hot milk slowly into the eggs.

Pour the mixture back into a clean saucepan and cook over a medium heat, stirring constantly, for three minutes, or until thick. Do not allow the mixture to boil.

Strain to remove the cloves and allow to cool for about an hour.

Stir in the rum, cream, two teaspoons of vanilla and nutmeg.

Refrigerate overnight before serving.
