Pancakes with cheese and celery

For the best pancakes, try Gibside’s simple recipe using North East produce with a Northumberland cheese and celery filling. The recipe is simple to follow and all the family can get involved.
Ingredients
100g plain flour
1 egg
125ml milk
125ml water
Pinch of salt
For the filling
200g cheese
100g celery
45ml mayonnaise
150g ham
Method
Pancakes:
Make a well in the flour and salt.
Add egg and milky water, beat until smooth.
Put a ladleful into a hot, lightly oiled frying pan.
Cook for a couple of minutes until set, toss and cook the other side.
Continue with the rest of the batter and enjoy!
Serve with a side salad.
Filling:
Mix the cooked ham with grated cheese and chopped celery with the mayonnaise.
Roll the filling into the pancake.
Place on a greased baking tray and cook at 200C for 10 minutes.

For the filling, the Northumberland Cheese Company at Blagdon sells fantastic cheeses in lots of flavours.
